Description:

The front cover begins in the top left hand corner with a box outlined with two think black lines. Inside the box, the title "Soft Cheese Manufacture" is written in black lettering followed by the phrase "Cottage Neufchatel Cream" and the logo. The back cover is plain besides for the Hansen's trade mark located in the center. The front end page is titled "Hansen's Dairy Preparations" and contains all the products available from Chr. Hansen's Laboratory, Inc. At the top, there is a black and white illustration of the factory. The rest of the inside pages are dedicated to various topics about soft cheese manufacturing. Some topics that are discussed are what every cheese maker should know, washing, salting, setting the milk, pressing, defects in soft cheese, and storage of soft cheese. There are also recipes listed such as cottage cheese sausage, cottage cheese club sandwich, and cottage cheese pie. The back end page is titled "A Whole Delight for All the Family" and is followed with a promotion for Junket.
