The Worcester Cook Book [Blue Print]


The front green cover has a dark blue deco border and the title in blue ink. "Prepared especially for the Worcester Salt Co. by Mrs. Janet McKenzie Hill, Editor of the Boston Cooking School Magazine" is above a drawing of a cellar of salt with a spoon. At the bottom is "With an interesting chapter on THE ROMANCE OF SALT." The back cover is blank. Includes a history of salt. The front end page has "Measuring Salt" which tells that Worcester Salt should not be substituted in recipes. The back end page has a drawing of a bag of Worcester Brand Salt in blue with a fine blue frame. The title page has the title and author with Worcester Salt Company, "Largest Producers of High Grade Salt in the World, New York." Opposite a photograph of a woman in an apron salting a roast is "Food Without Salt Would Not Keep You Alive" which tells where salt comes from and its benefits. There are tips for using salt in cooking (soak cabbage or cauliflower in salt water to make insects lose their hold) followed by recipes for pickles, sauces, dressings, parfaits and ice cream and to keep meat in hot weather. There is information on the advantages of "Free Running" Salt and how and how much salt Worcester Salt produces. Finally, there is "A Romance of Salt" which provides the history of salt: geological, biblical and ancient, folk lore, superstition and even its role in wars.
